...otherwise known as crepes. :) An old favorite breakfast of mine! It's definitely in the sweet-treat category!
Ingredients:
Butter 6T, melted (save a little for pan)
Eggs 6
Salt 3/4 t
Sugar 6T (splenda if that works for you)
Milk 2C
Flour 1 1/2C
GM 2T (though a bit more is probably more realistic)
Method:
Mix all of the ingredients with a hand blender.
Heat aluminum pan on lo-med heat.
Pour just a couple tablespoons of the batter in the center of the pan. Pick up pan and slightly swirl batter around to cover the total bottom of the pan. The super thin amount of batter there is normal, and what we're aiming for.
Let cook. Flip crepe over. Let cook. Don't leave on too long; These cook quickly and should appear light golden and white.
I like to serve these crepes with Philadelphia cheesecake-flavor cream cheese spread on them.
Roll the crepes up and top with fruit if desired and syrup. The kicker is to put a little GM in your syrup! Yummy!!
