Ingredients:
5 oz organic baby spinach
1 onion, chopped
1 tomato, chopped
1 garlic clove, chopped
1-inch slice ginger, chopped
1 cinnamon stick
1/4 teaspoon cardamom powder
1 tablespoon coriander
1/2 teaspoon garam masala
1/2 teaspoon paprika
1/2 teaspoon salt
200 grams paneer cut into cubes
Method:
1. Steam spinach in 3/4 cup water, and set aside.
2. Saute onion, cinnamon, cardamom, ginger, and garlic in 2 tablespoons coconut oil until onion is translucent.
3. Add tomato, and reduce heat.
4. Mix in coriander, garam masala, paprika and salt.
5. Add spinach with its water, cover and simmer for 20-30 minutes. Stir occasionally.
6. Puree 3/4 of mixture in food processor.
7. Stir paneer into the other mixture, and raise heat.
8. Pour puree back into pan, and stir.

palak paneer looks delicious. I love them as it easy to make.
