Dutch Baby

A family tradition that goes back a generation, having a slice of Dutch Baby with family amidst laughter and a warm feeling of being with loved ones. I usually make Dutch Baby more often around the holidays. It's definitely a sweet treat!

Ingredients:

3/4 cup milk
3/4 cup flour
3 eggs
1/4 cup of butter (sliced squares from a stick of butter)

Topping:

light (south beach approved) cool whip
sliced peaches (I buy frozen organic and heat before serving)
light sugar-free syrup
confectioners (powdered) sugar if you're really feeling festive

Method:

Preheat oven to 350 degrees.

Place cast iron skillet in the oven with half of the butter slices.

Blend and whip milk, eggs, flour, and remaining butter (butter melted in separate container in microwave-Usually a minute will melt it)

Pour batter into the buttered cast iron skillet. (Tip: Don't worry about the butter whirling around in the bottom. It won't be evenly distributed, but it will help give the end product, puffing, it's character. :)

Bake 30 minutes. Oven temps vary; So, you should check on it after 20 minutes to make sure it's not browning darkly. You should see it puffing up almost dome-like.

Around the time you should take it out of the oven, the batter will be very lightly and unevenly crispy and brown.

Remove from oven.

Dust lightly with powdered sugar.

Cut in pie-like slices.

Top each piece with cool whip, peaches, and syrup.

Serve with a cup of your favorite coffee or tea. Enjoy and be cozy!
