India: Chana Masala

Here is one I thought I'd add for any Indian food lovers out there like me...

Ingredients:
Chick peas 1 can or 1 cup raw
Onion 1
Tomato 1
Green chili 1
Garlic 4-5
Ginger an inch
Bay leaves 2-3
Red chili powder 1 tsp.
Turmeric Powder 1/2 tsp.
Coriander powder 1 tsp.
Garam Masala Powder 1 tsp.
Tea 1 tsp.
Olive oil 3 tbsp.
Salt to taste
Coriander leaves for garnishing

Method:
1. Cut onion, tomato and green chili. Grind it in food processor along with ginger and garlic and make paste.
2. Heat oil in a pan and fry bay leaves for 30 secs. Add the paste and fry on medium heat until golden brown (The oil starts separating from the mixture).
3. Add red chili powder, turmeric powder, coriander powder, garam masala and salt. Mix well. Fry for 2-3 minutes.
4. Add water enough to make thick gravy. Bring the gravy to boil.
5. Add can chick peas. Stir well and cook over medium heat for 5-7 minutes.

Garnish with chopped green coriander leaves and serve hot.
Eat the chana masala like a dip/curry over rice or my favorite, with whole wheat Indian breads called paratha. Recently, I also started putting about 1/2 tsp of nonfat yogurt on top, and then adding the coriander leaves. I like this addition because the dish is still hot, but some bites are toned down with a creamy yogurt.

I make this recipe all the time! Watch out, it's very spicy! :) And healthy, too.
